Cheesy Zucchini Pasta Cups by Dietitian Ali from the Toddler Kitchen
Cheesy Zucchini Pasta Cups are a fun twist on classic macaroni and cheese. Made with simple, ingredients and Wholesyum Zucchini Hearts for an easy veggie boost, they’re quick to make and perfect for meal prep, school lunches, or an on-the-go bite. These pasta cups also work great with Wholesyum Pesto Hearts!
Ingredients
2 cups macaroni pasta noodles
½ cup dry breadcrumbs
2 tablespoons olive oil
1 cup grated Cheddar cheese
1 cup grated parmesan cheese
½ cup milk
1 tsp garlic powder
4 Wholesyum Zucchini Hearts
1 egg (beaten)
Directions
Preheat the oven to 350 degrees F. Grease or line a muffin pan.
Bring a large pot of water to boil and cook the pasta according to package directions. Drain and set aside.
While pasta noodles are cooking, in a small bowl, stir breadcrumbs with 1 tbsp olive oil. Set aside for topping.
In another small bowl, defrost the WholeYum Zucchini Hearts by microwaving at 20 second intervals, until soft. Drain any excess water.
In a large bowl, combine pasta, remaining olive oil, half the Cheddar cheese (preserving the remaining half for topping), Parmesan cheese, milk, WholesYum zucchini, and garlic powder and stir to combine.
Let cool for 2-3 minutes, then stir in beaten egg.
Spoon mixture into prepared muffin pan. Sprinkle the remaining cheddar cheese on top. Top with the breadcrumb mixture.
Cover with foil and bake for 15 minutes. Remove foil and bake for 5-7 minutes more, until the tops are golden and centres are set.
Let cool slightly before removing from pan and serving.
