Quick & Easy Zucchini Yogurt Dip by Liv Rahal, Registered Dietitian

Anyone else feel like summer is so full there’s no time for… literally anything?
And then boom - another BBQ invite where you’re expected to bring something. Cue the panic. Cue the same ol’ 7-layer dip.
Okay, let me upgrade you (turn sound on)
This creamy, herby Greek yogurt dip comes together in 5 minutes, feels fancy, and will have everyone asking for the recipe.
Ingredients
2 cups Greek yogurt
Juice of 1 lemon
2 thawed wholesyum zucchini hearts
2 tbsp za’atar
1 tbsp olive oil
1 clove garlic, minced
Salt & pepper to taste
Directions
Thaw the wholesyum zucchini hearts.
Add the rest of the ingredients.
Blend. That’s it. No washing, chopping, or sautéing.
Serve it with pita, veggies, crackers - or just eat it straight off the spoon. No judgment.

Liv Rahal, Registered Dietitian
Liv Rahal is a registered dietitian with roots across Canada - having practiced in both Halifax and Victoria - but now calls Victoria home. Her path to dietetics has been anything but linear: she earned her Bachelor of Human Kinetics at UBC Okanagan in Kelowna, completed her Bachelor of Science in Applied Human Nutrition & Dietetics at MSVU in Halifax, and even managed to study at QUT in Brisbane, Australia.
Today, Liv balances multiple roles across four clinics in Victoria and works online assisting in clinical trials. Her practice has spanned long-term care, community health, bariatric surgery, lifestyle medicine, women’s health, and weight management. At the heart of it all, she is passionate about helping people see how food can support their goals, improve their health, and (most importantly) help them feel their best.
When she’s not working, Liv can usually be found teaching spin classes, curled up with a good book, or hanging out with her big dog, Benny. And if you catch her out and about, there’s a good chance she’ll be wearing leopard print - it’s kind of her thing.
